Lean Mince and Chickpea Stew

What do you do with a packet of frozen vegetables, canned chickpeas and lean mince? You make one hell of a delicious stew. No fuss, no gimmicks, just simple affordable ingredients. I believe everyone should be able to cook and for that to happen, lets keep recipes simple and easy to follow. A nutritious and flavorful dish that the whole family can enjoy together, read on for the recipe.

INGREDIENTS

300g 5% fat beef mince
1 can chickpeas, drained
1 tbs vegetable oil
1 onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 can chopped tomatoes
1 cup mixed frozen vegetables
1 tsp mixed herbs
Half stock cube
1 tbs Encona extra hot pepper sauce
Salt and black pepper to taste



METHOD:


  1. In a large pan, heat up oil and fry mince until brown. Add in onions, bell peppers and tomatoes, mix until combined.
  2. Prepared stock according to packet instructions, pour into mince mixture. Add in chickpeas and vegetables, mix.
  3. Lower heat, season with herbs, salt and encona sauce. Leave to simmer for 10 mins or until vegetables are tender. Serve.
