Chicken and Vegetable Udon Noodle Soup

If you're a noodle lover, raise your hand *I know my hand is raised high*. I come at you today with another super easy one pot dish, one that is sure to get you through these cold windy days. There we were thinking summer was upon us when we had a few days of warmth, the weather has now turned and come back with a vengeance. But its okay, I've got something that's sure to cheer you right so why not give this simple recipe a go.

Serves 5


Amoy straight to wok Udon noodles
3 chicken breast fillets, chopped
3 spring onions, chopped
Red bell peppers, chopped
1 packet baby corn, cut up
1 large courgette, sliced
1 cup beansprouts
1 vegetable stock cube
1/2 tsp turmeric
Chilli powder (optional) 
Salt and pepper to taste
1 tbs olive oil


  1. In a large wok, heat up oil and fry chicken breast until no pink remains. Now add onions, Bell peppers, baby corn and beansprouts. Mix gently. 
  2. Prepare stock cube according to package instructions and pour in. 
  3. Add Udon noodles and stir until combined. 
  4. Leave to simmer for 5 mins. Serve.
