Bean and Legume Filling

They make a crazy good sandwich filling like this one. Legumes are among some of the most versatile foods and includes vegetables like peas, lentils and beans. They come fresh, dried or canned which is great. I tend to buy them canned in water as its just more convenient. As for beans, I love all kinds, butter beans, red kidney beans, chickpeas. In case you haven't noticed, I use bean in a lot of my cooking, mainly because of their health benefits.

Quorn Spaghetti Bolognese

Who loves a one pot dish? I know I do, they're quick and well, there's fewer dishes to do afterwards. We had this practical in University back in November and this was one of the dishes I made with my group. We had to design a day's meal plan for a Type 2 Diabetic and personally I feel that this is the best way to learn. Putting all that theory into practice, everything starts to make sense then. Anyway, here's to quick, nutritious meals and few dishes.

Strawberry Kale Salad with Chicken Breast and Avocado

Fruit in a salad? You cannot be serious? That was me a few years back, fast forward to now, I can barely imagine digging into one without fruit. They add some much needed sweetness to savoury dishes, not to mention its a great excuse to add to your 5 a day. Apologies for being M.I.A, Dietetics really does keep me busy but term 1 of year 2 is over and I survived, progress. In other news, I'm  engaged now! It actually happened in September 2018 but I didn't really have the time to announce it then, finally got round to it. Here's a quick salad perfect for a relaxed Staturday.

Roasted Lemon Mint Chicken Thighs

Happy 2019!!! I hope you enjoyed the holidays. Now let's talk food. The delicate flavour of mint and lemon goes so well together, something that would be great for a nice, relaxing weekend. I'm giving the soups and casseroles a rest this week to explore other foods & well, chicken is never a bad start. For a no-fuss dinner, these chicken thighs are a perfect choice.
