Looking for a little number to bake up this weekend, this one just might be for you. I love baking and ever since I started at the age of 9, I've continued to get better and better. Something is comforting about kneading dough or whisking up some batter, so here's to a delicious batch of brownies and some hot cocoa.

Butter Bean Steak Sandwich

Have you ever tried Butter Beans? They are creamy-coloured and a lot bigger and smoother than regular beans. Butter beans can be incorporated into a variety of meals including salads, soups, stews, sandwiches and more. That's how this little number came about, it seems that with warm weather comes more colourful, 'dry' meals. British weather has been absolutely glorious the past few days, we did not see this coming. So much so that we are missing the rain a little, the humidity is a tad much. So here's a delicious sandwich that is sure to take your mind off this heat.

They come fresh, dried or canned which is great. I tend to buy them canned in water as its just more convenient. As for beans, I love all kinds, butter beans, red kidney beans, chickpeas. In case you haven't noticed, I use bean in a lot of my cooking, mainly because of their health benefits.

Quorn Spaghetti Bolognese

Who loves a one pot dish? I know I do, they're quick and well, there's fewer dishes to do afterwards. We had this practical in University back in November and this was one of the dishes I made with my group. We had to design a day's meal plan for a Type 2 Diabetic and personally I feel that this is the best way to learn. Putting all that theory into practice, everything starts to make sense then. Anyway, here's to quick, nutritious meals and few dishes.

Fruit in a salad? You cannot be serious? That was me a few years back, fast forward to now, I can barely imagine digging into one without fruit. They add some much needed sweetness to savoury dishes, not to mention its a great excuse to add to your 5 a day. Apologies for being M.I.A, Dietetics really does keep me busy but term 1 of year 2 is over and I survived, progress. In other news, I'm  engaged now! Happy 2019!!! I hope you enjoyed the holidays. Now let's talk food. The delicate flavour of mint and lemon goes so well together, something that would be great for a nice, relaxing weekend. I'm giving the soups and casseroles a rest this week to explore other foods & well, chicken is never a bad start. For a no-fuss dinner, these chicken thighs are a perfect choice.
