Bell Pepper Chicken Soup


I hope you had a lovely Christmas!! The great thing about winter is the heart-warming soups and stews like these; ones that truly serve their purpose in the cold weather. Spring and summer on the other hand were made for lighter meals. I'm talking tasty wraps, salads, maybe soups like squash soup and of course don't forget to always get those Carbohydrates by throwing in the staples. Then again, UK weather doesn't exactly get that much warmer in the Spring or Summer so there's a chance I'll still be sneaking one of these hearty soups every once in a while.

Prawn Medley

I'm back with a good recipe, one I think you'll love. Never thought I'd see the day when I would be absolutely loving Seafood. Yes ladies and gentlemen, I have turned a new page, fully indulging in all things Seafood and it all started with one restaurant visit last year. After a long day at university or work, the last thing you want to do is to spend more than hour cooking. Why not go for dishes that are easy and quick to make as well as nutritious like this Prawn Medley. With a variety of flavours and textures, this delicate prawn dish is set to become a firm favourite.

Quinoa Porridge with Honey [Dairy & Wheat free]

Ever heard of Quinoa porridge? Yes, it's a thing and I only really looked into it a few of months back. Oats have always been my go to but lately I've been indulging in Quinoa porridge. This protein packed (quinoa contains all 9 essential amino acids), dairy and wheat free breakfast is creamy, rich, low in calories and absolutely perfect for these cold winter mornings. Like oats, there are endless possibilities when it comes to toppings. I mean, what would be the point of breakfast if you didn't have the option to jazz it up a bit? I don't know about you but I'm totally a breakfast person. So, if you're not on board just yet with never skipping your breakfast, you should start thinking about jumping on the bandwagon. Quinoa porridge can be made the night before and reheated the next morning if you are pushed for time. During the summer months, I was no doubt over indulging in homemade smoothies for breakfast. As soon as the temperature fell, I moved on to oatmeal and quinoa porridge; ahhh there is nothing quite like a nice warm bowl of porridge to get you fueled up for the day.
