*Chicken Pilaf with greek yoghurt and chives

I love food but I enjoying cooking for other people even more. Last night I took some time out to cook a delicious dish for a few friends. I made a pot of Chicken Pilaf which went down a treat. Do you ever take the time to sit down and have dinner with your loved ones? Eating with other people somehow makes food more enjoyable and I guess that may be because food is a very social thing. Making this dish was made easy by Uncle Ben's Long grain & Wild Rice. Thank you to the Uncle Ben's team for kindly sending over an exceptional package. Cooking doesn't have to be hard, there's always a way around it and well when it comes to rice, Uncle Ben's is a good place to start.  



This Chicken Pilaf is full of flavour and takes just 30 minutes to make, if that's not a winner in your book then I don't know what is. Having a sit down meal allows us to take a break and just share our love for food with each other. This is the reason why I try to have as many sit down meals as possible every week, food does bring us together after all. Here's how you can make this Chicken Pilaf:

Serves 4                                                              Prep and cooking time: 30 mins

INGREDIENTS


500g Uncle Ben's Long grain and Wild rice
375g chicken breast, chopped
400g greek yoghurt 
100g green beans
3 tbs morrocan spice mix
1 tbs olive oil
2 garlic cloves
4 Spring onions, roughly chopped
Small handful of fresh chives, finely chopped
300ml chicken stock


METHOD:

1. Heat up oil in a large pan on medium heat. Fry chicken breast until no pink remains.
2. Add green beans, garlic, black pepper and morrocan spices and mix until combined.
3. Pour in stock then add Uncle Ben's Basmati rice. Simmer gently for 3-5 minutes.
4. Chop spring onions and add into pan, stir through. Now mix yoghurt and chives together, set aside. 
5. Divide pilaf into plates then add a dollop of yoghurt on the side. Serve.
