No bake Protein Peanut Butter Chia Bars

There are days when I get extremely peckish. On days like those, I want to everything in sight, that also includes snacking like its a sport. However when we snack, we never reach for the healthy option but its time to change that with these Protein and Peanut Butter Chia Bars.



Prep time: 10 mins                                                 Refrigeration time: 2 hours
Makes: 9 bars

Ingredients:

2 tbs olive oil
1/2 cup flour
2 tbs peanut butter
1 tsp vanilla extract
A few cubes of dark or milk chocolate (your choice)
1/4 cup chia seeds



Method:
  1. In a medium sized bowl, mix oil flour and peanut butter.
  2. Add in chocolate chunks and microwave mixture for 1 minute. This should melt the chocolate chunks and soften peanut butter.
  3. Mix with electric mixer or spoon until combined. 
  4. Line a square baking tin with baking paper the transfer mixture into tin. 
  5. Place a sheet of plastic wrap over the top. Refrigerate for 2 hours allowing the bars to set. 
  6. Remove bars from pan then slice into bars. Enjoy!
