Oatmeal porridge with Bananas, Frozen berries and blueberries

Today is the last day of July and frankly, I cannot believe it! This year is flying by and I'm not quite sure how I feel about that. Still, I'm having a really nice summer, no assignments, no university, bliss. Might as well enjoy it to the fullest since I don't exactly have a summer next year. Oatmeal is my go to breakfast most of the time because they are so versatile. The list of toppings that can be added to them is endless, the taste can be manipulated in a variety of ways and they are convenient. Started the day with this colourful, fruit-filled bowl; a great way to add to your 5 a day.

BSc Human Nutrition and Dietetics: Year 1 complete

It's official, I passed my first year of Dietetics with a 74% average. Words can't even explain how happy I am, all those hours spent in Starbucks doing assignments and revising paid off. I am just really proud of myself and I'm one step closer to my dream of being a Registered Dietitian. Here's to an even better second year which is set to be extra interesting. I re-enrolled for second year a few days ago and had a look at the modules. I'll just say that I'm really excited to get back to University and to head out on my very first placement. I'm going to work even harder, I've got to keep this momentum going.

Prawn Medley

I'm back with a good recipe, one I think you'll love. Never thought I'd see the day when I would be absolutely loving Seafood. Yes ladies and gentlemen, I have turned a new page, fully indulging in all things Seafood and it all started with one restaurant visit last year. After a long day at university or work, the last thing you want to do is to spend more than hour cooking. Why not go for dishes that are easy and quick to make as well as nutritious like this Prawn Medley. With a variety of flavours and textures, this delicate prawn dish is set to become a firm favourite.

Butter Bean Steak Sandwich

Have you ever tried Butter Beans? They are creamy-coloured and a lot bigger and smoother than regular beans. Butter beans can be incorporated into a variety of meals including salads, soups, stews, sandwiches and more. That's how this little number came about, it seems that with warm weather comes more colourful, 'dry' meals. British weather has been absolutely glorious the past few days, we did not see this coming. So much so that we are missing the rain a little, the humidity is a tad much. So here's a delicious sandwich that is sure to take your mind off this heat.
