Simple Pork Pasta

The amount of people I've heard saying that they are avoiding pasta because it makes their blood glucose levels spike is unbelievable. This is a myth! I'm sorry to burst your bubble but you might be surprised to know that most grains actually have a low glycemic index including good ol' pasta. Foods of low glycemic index such as pasta offer a slow and steady release of glucose whereas foods with a high glycemic index release glucose rapidly.  Low GI foods help to keep your blood glucose levels under control. It's so easy to make and versatile, the list of dishes you can make from it are endless. So why not give this little number a try.



Cooking time: 25 mins
Serves: 2

INGREDIENTS:

1 cup Wholewheat pasta

2 pork loin steaks, cut into small pieces

1 tbs olive oil

Green, yellow and red bell peppers, chopped

A few cherry tomatoes, halved

Spring onions, chopped

3 tbs Greek yoghurt

1/2 tsp mixed herbs

Garlic powder

Salt & pepper to taste



METHOD:


Boil pasta according to packet instructions and set aside.

In a medium sized pan, heat up oil and fry pork loin steaks for about 10-15 mins on medium heat, until golden brown.

Add onions, bell peppers and cherry tomatoes, mix. Season with mixed herbs, garlic powder black pepper and salt then gently fold in pasta.

Lower heat, add yoghurt and mix until pasta is coated. Simmer for 3-4 mins. Dish up and eat up.
