Roasted Lemon Mint Chicken Thighs

Happy 2019!!! I hope you enjoyed the holidays. Now let's talk food. The delicate flavour of mint and lemon goes so well together, something that would be great for a nice, relaxing weekend. I'm giving the soups and casseroles a rest this week to explore other foods & well, chicken is never a bad start. For a no-fuss dinner, these chicken thighs are a perfect choice.

What you need:



  • 5 free-range chicken thighs
  • Fresh juice from 1 lemon 
  • 2 tbsp olive oil
  • Homemade mint sauce (I used this recipe to make mine)
  • 1 garlic clove, very finely chopped
  • 1 tspn paprika
  • Salt and black pepper to taste



  • Method: 

    1. Heat the oven to 200 C. Place the chicken thighs and chopped lemon in a roasting tin.
    2. Drizzle with oil and season chicken.
    3. Roast for 25 minutes until cooked through. Mix the mint leaves with the garlic and the lemon juice, and pour over the chicken.
    4. Roast for a further 10 minutes then serve.
