What you need:
5 medium Mackerel, cleaned, rinsed and dried
3 tbsps olive oil
juice of 2 lemons
3 tbsps curry paste
Half tbsp cumin
Salt and pepper to taste
- Preheat a gas grill to 400°F.
- Mix the olive oil, juice of 1 lemon and curry paste then rub all over the fish.
- Place on prepared baking tray; drizzle with remaining lemon juice.
- Loosely wrap the foil around the tray, and seal the edges tightly.
- Grill for 20-30 minutes.
