I love casseroles, I love bakes and I can turn just about anything into one. Christmas is just over 24 hours away and I can definitely say that after all the cooking and baking is done, I will not be moving unless it's for dark chocolate or food. Casseroles and tray bakes make the perfect dish, easy to prepare and a variety of foods are cooked all at once. I'm talking chicken, peppers, potatoes, tomatoes. Feel free to add a sprinkle of cheese if you're really up for living on the edge this Christmas. Prep time: 10 mins Cooking time: 45 mins What you need:
2 carrots, sliced
1 pack of baby potatoes
1 pack of chicken wings, marinated 2 hours before
Yellow, green and red pepper, chopped
Handful of Beansprouts
1 tin of chopped tomatoes
Fresh bunch of spring onions, chopped
1 garlic clove, crushed
2 tbsps olive oil
A sprinkle of salt to taste
Preheat oven to 180C.
Place chopped vegetables and baby potatoes into baking dish. Pour oil over the vegetables and squeeze lemon juice then sprinkle black pepper and salt.
Lay chicken wings on top of vegetables then sprinkle spring onions on top.
Bake for 45 mins or until chicken has no pink left.
