Mushroom Stir fry

This little number is one that takes less than 15 minutes to prepare but tastes like a million dollars. Its quick and easy to make but most importantly, healthy. I've had a few emails requesting that I do more recipes suitable for vegetarians so here it is. There no way I can ever make mushrooms exciting but I promise you, this is one recipe that is definitely worth trying. 
This stir fry takes about 10 minutes to prepare and is great to have for lunch or dinner.


What you need:

Tbsp Olive Oil
Rice Noodles
One carrot (thinly sliced)
Half Red Cabbage (chopped)
Fresh Greens (chopped)
2 large Mushrooms, sliced
Half Onion (grated)
A pinch of salt to taste

All you have to do now is put it all in a pan and watch it fry, don't forget to mix it well. Add some spices or soy sauce for flavour if needed. Simple isn't it:)
