The majority of vegetable pasta dishes I've eaten in restaurants tend to be quite dry; I like mine soggy! This may be because I consume a lot of soups or merely because I'm weird like that. Either way, here's my version of vegetable pasta. If you can't settle down after a hard day at work; this comforting dish is sure to do the trick. Don't let those left over vegetables die out in your fridge; they are just waiting to be put to good use and this is such a great way.
I used gluten free pasta for this dish; ordinary pasta works great too. What vegetables and spices you add to the dish is completely up to you and that's the best part. Here's a recipe I came across on BBCGoodfood that you can try at home:
