What you need:
1 cup brown rice or white rice (depends on preference)
250g minced beef
Quarter cup chopped red onions
A handful of chopped peppers (red/yellow)
Quarter cup shredded cheddar cheese
2 tbsp homemade salsa or you can buy
Red kidney beans
Handful of spinach
Handful of Kale
Tbsp French dressing sauce
- Cook rice according to package instructions. I have a rice cooker so that's a 15 minute job.
- Whilst rice is cooking, fry up your minced beef and season then set aside. In a tsp of oil on medium heat, add beans, onions, spinach, and kale. Fry for a minute just to heat them up.
- Layer in no particular order; rice, beans fry up, cucumber, salsa, french dressing and a sprinkle of cheese.
- Tada, let's eat.
