CHRISTMAS MENU: Banana Loaf!

I hate wasting food especially fruits which is why when I have overripe bananas, I make banana loaf. This is my automatic response to using them up instead of just throwing them away; besides Banana Bread made right is absolutely delicious. During the festive season, a lot of people tend to have time off work and so for that much needed, well deserved afternoon tea; why not throw in this delicious little number.  Even after Christmas is over; afternoon tea can never be the same again.
What you need:
  • 140g butter, softened, extra for the tin
  • 140g self-raising flour
  • 1 tsp baking powder
  • 140g sugar 
  • 2 large beaten eggs 
  • 2 very ripe mashed bananas
  • Pinch of Icing sugar, for decoration
Method:
  1. Heat oven to 180C/160C fan/gas 4. Butter a loaf tin and line the base and sides.
  2. Cream the butter and sugar using an electric mixer until light and fluffy.
  3. Slowly add the eggs and a little flour at a time. Fold in the remaining flour, add baking powder and mashed bananas. Mix well.
  4. Pour into baking tin and bake for 30 minutes until a knife comes out clean. 
  5. Cool in the tin for 10 minutes, then remove to a wire rack.
  6. Sprinkle a pinch of Icing sugar on top for decoration. Enjoy!
