Kick start healthy habits!

If you follow me on Instagram; you may be aware of the fact that I've become a massive healthy eating enthusiast. I've completely cut out fast food, sodas, foods that are high in sugars and fat and of those beloved chocolates. I've been living like this for two weeks now and I can honestly say that I feel G O O D! Combining my now regular workouts and healthy eating, junk food is all but a long lost memory. Besides, a healthy, active body equals a healthy mind right?!


Lunch today consists of this quick yet delicious chicken stir fry. It takes about 15 minutes to prepare so hear is what you need:
  • A packet of Rice Noodles
  • 2 tablespoons Olive Oil
  • Chicken Breast
  • 2 Carrots
  • Fresh Kale
  • Chopped Leafy Green Vegetables
  • 1 Onion
  • A handful Beansprouts
  • Salt
Start by peeling the carrots and cutting them into long thin slices; roughly chop the kale, onion and leafy green vegetables.  Heat up the olive oil then fry the chicken breast until cooked and golden brown. Tip out into a bowl then using the same oil, place the chopped carrots, onions, kale, leafy green vegetables and salt into the plan. Fry for approximately 2 minutes at moderate heat then stir in the fried chicken breast and rice noodles. Let it cook for about 3 minutes and voila; lunch is ready! Its that easy.
